Five Food Find about Italian Food
1. It was not until the 1700’s that tomatoes were first found in Italian dishes.
2. The ‘essential’ ingredients in Italian food include: olive oil, garlic, basil, oregano, mozzarella, ricotta, parmigiana, capers, tomatoes, sausage and of course pasta
3. An average Italian meal is divided in two parts, primo piatto & secondo piatto; the primo include a pasta or risotto; the secondi includes any meat and fish meals, complemented by a contorno, a side dish of vegetables.
4. The Italian dessert, Tiramisu, (ladyfingers dipped in coffee, layered with mascarpone cheese and egg yolks then flavored with liquor and cocoa) roughly translates to “pick-me-up.” Did you know that this dessert did not appear until the late 1960′s and in the U.S. by the early 1980′s.
5. Italians prefer their pasta cooked ‘al dente’ literally meaning “to the tooth.” The pasta should be a bit firm, offering some resistance to the tooth, but tender.

Umm! Could have sworn I’d just eaten…so why am I suddenly ravenously hungry again!! My landlord is Italian, I’m surprised he didn’t turn up with the customary big plateful of Italian deliciousness yesterday!!
I wish I had known about this a couple days sooner! My fiancée and I love Italian food and the excuse to eat it the other day would have been most welcome. I make sure to put it down in the calendar for next year.

Just found out that cooking pasta “al dente” actually lowers its glycemic index . . . Those Italians are on to something!
Those are some cool facts! Really, a riot over the price of flour. I think if those same people were here today and had to experience some of things that are going on with the economy and sky-rocketing prices of things, instead of just a riot, they may start a civil war ;-)

I’m sure to eat Italian food today since I’m in Italy. Did you know that the word biscotti means twice cooked, which is how biscotti are made? These days, Italians use the word biscotti to mean any kind of cookie and the word cantucci to refer to the item Americans think of as biscotti.

I enjoyed a homemade teramisu cake last night, delightfuly decadent if not over the top, after a rich swiss raclette cheese dish. Feelin´it today haha.

In Italy we have more “essential”ingredients, every region has its own essential ingredients, we have different essential ingredients in north, central and south italy … for example we all use olive oil but in north italy we use also butter for tons of recipes ( ex. you have to use butter for a perfect Risotto), garlic but also onion, basil most in summer time, we use very often rosemary, sage, thymus … and so on !!!!
I know! For brevity I was trying to mention the top ones. You are right, regionally and seasonally the ingredients change. Butter is used in stead of Olive Oil in in many parts of Northern Italy. I can’t think of Italian food without olive oil can you?
no i cannot !!! We produce it and i love it … probably i love all the italian cuisine !!! How do you know so many things about italian food?
I personally use two sticks of butter for my Risotto con Funghi, and a pinch of saffron.
One thing I do appreciate about the cuisine of Northern Italy is the slight hybrid of Alpine/French influences, especially in the cream sauces. Southern Italy has amazing food, to be sure, but give me Piemonte any day!
