This is one of those truly American recipes that can be found in early New England cuisine. Indian Pudding is a baked custard made from corn meal, eggs, spices and sweetened with molasses. “Indian” refers to the corn meal, not the indigenous people of the times. This recipe calls for lots of time and patience because if cooked to quickly the eggs will scramble and the pudding will be lumpy.
