I love these little bivalves! When cooked properly they are like butter. Scallops can be found all over the world and are a highly prized food source. Also, some of their shells are valued by collectors. Did you know that they are active swimmers? That is why their adductor muscles are so big. I think for lunch I will be having baked scallops with mushroom cream sauce.
