The most notable influences on southern cooking come from English, Scottish, Irish, German, French, Native American, and African American cuisines.

Many items such as squash, tomatoes, corn (and its derivatives, including grits), as well as the practice of deep pit barbecuing were inherited from the southeastern American Indian tribes such as the Caddo, Choctaw, and Seminole.

The South’s propensity for a full breakfast is derived from the English fry up, although it was altered substantially.

A traditional Southern meal is pan-fried chicken, field peas (such as black-eyed peas), greens (such as collard greens or mustard), mashed potatoes, cornbread or corn pone, sweet tea, and a dessert that is usually a pie (sweet potato, chess, shoofly, pecan, and peach are traditional southern pies), or a cobbler (peach, blackberry, or mixed berry are traditional cobblers).

~The dessert was created to celebrate the  famous and slender opera singer, Nellie Melba in 1892.

~It is said when she gained weight in her later career the same chef created a thin baked toast for her diet, Melba toast.

~Other versions of this dessert use pears, apricots, or strawberries instead of peaches and / or use raspberry sauce or melted red currant jelly instead of raspberry purée.

1808 Salmon Portland Chase was born. He was Secretary of the Treasury under Abraham Lincoln, and later Chief Justice.

1921 Pierre Franey was born. A French chef who became famous as the chef of ‘Le Pavillon’ restaurant in New York City from 1945 to 1960. He published several cookbooks and collaborated with Craig Claiborne on the New York Times food column, ‘The 60 Minute Gourmet’.

1957 The Frisbee was invented. The pie tins of the Frisbee Pie Company of Connecticut were the inspiration for the creation of the Frisbee. A Wham-O employee supposedly saw drivers for the pie company showing Yale students how to throw the pie tins.

1962 Ernie Kovacs, innovative comedian, died. One of Kovacs’ first TV appearances was in Philadelphia in 1950 with a chef, Albert Mathis from the Gulph Mills Country Club, in a live unrehearsed cooking show titled ‘Deadline for Dinner.’

1968 “I Heard It Through The Grapevine” by Gladys Knight & Pips is #1 on the charts.

2002 U.S. President George W. Bush fainted after choking on a pretzel

Fried pies are small fried dessert pastries, which have fruit fillings wrapped in the dough.

Fried apple pies were first introduced in McDonald’s in 1968, originally fried in lard.

New Hampshire fried pies were the favorite dessert of U.S. president Franklin Pierce.

The two most popular flavors of fried pies in the deep South are apple and peach.

Roadside stands in the South often refer to fried pies as “Crab Lanterns.”

 

Today’s Food History

  • 1878 The first telephone was installed in the White House in Washington, D.C. Alexander Graham Bell installed it himself. Rutherford B. Hayes was president.
  • 1885 Pepper is sold for the first time.
  • 1886 Rex Stout, American crime writer was born. More than 70 of his novels and stories feature the fictional gourmand/gourmet detective, Nero Wolfe. Archie Goodwin, the detective’s assistant, described him as weighing “one seventh of a ton” (about 286 pounds). Shad Roe and Duck were two of Wolfe’s favorites, and he also consumed copious amounts of beer. Stout also published ‘The Nero Wolfe Cookbook’ in 1973.
  • 1936 The first patent was issued for a commercial scale hydroponic system for plant culture (a‘hydroponicum’). Ernest Walfrid Brundin and Frank F. Lyon received the patent on the system they had set up the previous year.
  • 1944 Eric Bloom of the music group ‘Blue Oyster Cult’ was born.
  • 1990 British and French workers digging the Channel Tunnel from their respective countries drilled through a final piece of rock and shook hands,  22.3 km from the UK, 15.6 km from France.
  • 1999 The Russian Duma passed an animal rights bill that prohibits people from eating their pets.

Did you know…

  1. Shortcake is a sweet biscuit (in the American sense: that is, a crumbly, baking soda- or baking powder-leavened bread).
  2. Shortcake is typically made with flour, sugar, baking powder or soda, salt, butter, milk or cream, and sometimes eggs.
  3. The most famous dessert made with shortcake is strawberry shortcake.
  4. Though today’s shortcakes are usually of the biscuit or sponge-cake variety, earlier American recipes called for pie crust in rounds or broken-up pieces, which was a variety still being enjoyed in the 20th century, particularly in the South.
  5. Though strawberry is the most widely known shortcake dessert, peach shortcake, blueberry shortcake, chocolate shortcake and other similar desserts are made along similar lines. It is also common to see recipes where the shortcake itself is flavored; coconut is a common addition. The term “shortcake” often refers to shortbread in the UK.

  • 1800 Chicken Marengo was supposedly created by Napoleon’s Swiss chef to commemorate the occasion of Napoleon’s victory over the Austrians in the Battle of Marengo on this day.
  • 1834 Cyrus Hall McCormick patented his reaping machine.
  • 1972 The EPA banned DDT in the USA. DDT residue is still found in some foods grown in the U.S. in 2002.
  • 1988Unusual uses for peanut butter sandwiches: In New Jersey, students in a school were kept in an extra 45 minutes by a six-foot black bear that had wandered into the playground. They kept it at bay by tossing out peanut butter sandwiches until the game warden arrived to take him away.
  • 1994 R.I.P. Henry Mancini. Oscar winning music composer, he wrote many songs and film scores, including the score for ‘Breakfast at Tiffany’s

Did you know…

  1. The donut or doughnut is a deep-fried piece of dough or batter. It comes from the Dutch origin of olykoeck or “oily cake”. The two most common types of donuts are the flattened sphere (you know…the ones that are injected with jelly or custard) and the ring donut.
  2.  Internationally, Dunkin’ Donuts has over 1700 locations in 29 countries and over 6,000 stores in 30 countries world-wide! In the U.S. there are over 4,400 locations across 36 states.
  3. Krispy Kreme is probably best known for their fresh, hot, glazed, yeast-raised doughnuts. The company’s “Hot Doughnuts Now” flashing sign is an integral part of the brands appeal and fame.
  4.  Jelly-filled and Chocolate frosted also rank as their top sellers. Coconut Crunch, although not a number one seller, still remains one of the over 52 varieties of donuts the chain produces on a yearly basis.
  5. Americans consume 10 billion doughnuts annually. It really is too big of a number when you consider that as of 1997, there were 6,792 doughnut shops in the U.S. alone. In 2005, I can only imagine that the number of doughnut shops has increased dramatically. Unfortunately, 1997 was the last year that all overall statistics and data is available on this subject (or at least that I can find!).

Today’s Food History

  • 1784 Marie-Antoine Carême was born in Paris, France. Marie Antoine Carême was known as “the cook of kings and the king of cooks”. He is the founder and architect of French haute cuisine. His story is one out of a Dickens novel.
  • He was one of 25 (?) children born to an impoverished family who put him out on the street at the age of about 10 to make his own way in the world. Lucky for the world he knocked on the door of a restaurant for a job. He might have knocked on the door of a blacksmith!
  • By the age of 21 Carême was chef de cuisine to Talleyrand. He also served as head chef to the future George IV of England, Emperor Alexander I of Russia, and Baron James de Rothschild. He wrote several large books on cookery, with hundreds of recipes and menus, a history of French cooking, instructions for organizing kitchens, and directions for elaborate architectural constructions of food for display (pièces montées). Carême died at the age of 48.
  • 1786 In New York City, the first commercially made ice cream is offered for sale.
  • 1824 A washing machine was patented by Noah Cushing of Quebec. This was the first Canadian patent ever issued.
  • 1848 Franklin Hiram King was born. American agricultural scientist and inventor of the cylindrical tower silo.
  • 1859 Walter Hunt died. Hunt invented the first safety pin (‘dress pin’) in 1849.
  • 1869 The first American patent for a sweeping machine was issued to Ives W. McGaffney of Chicago.
  • 1871 Louisa Tetrazzini born. Italian operatic soprano. Chicken Tetrazzini, created by an American chef (San Francisco?), was named in her honor.
  • 1880 At the 1st International Miller’s Exhibition in Cincinnati, Ohio, Washburn Crosby Co. of Minnesota (forerunner of General Mills) won 3 top medals for their flour, including the ‘Gold Medal’ for Superlative Flour. They adopted ‘Gold Medal’ as the name of their best flour.
  • 1926 Dame Nelle Melba gave her farewell performance. Melba toast and Peach Melba were named in her honor.
  • 1937 World’s largest flower blooms in NY Botanical Garden, a 12 foot calla lily.
  • 1985 Creme Fraiche won the Belmont Stakes, ridden by Jockey Eddie Maple.

Here are today’s five food facts about Cheesecake:

 

  • Cheesecake is a dessert formed of a topping made with soft, fresh cheese upon a base made from biscuit, pastry or sponge. The topping is frequently sweetened with sugar and flavored or topped with a puree or compote of fruit.
  • Savory cheesecakes also exist, served sometimes as hors d’oeuvre or with accompanying salads. Despite their name, cheesecakes are technically tarts; the word ‘cake’ was formerly applied to a much broader category of foods than it is today.

  • Cato the Elder’s De Agri Cultura includes recipes for two cakes for religious uses: libum and placenta. Of the two placenta is most like modern cheesecakes having a crust that is separately prepared and baked.

  • Cheesecakes can be broadly categorised into two basic types – baked and unbaked – and each comes in a variety of styles determined by region.
  • Japanese-style cheesecake relies upon the emulsification of cornstarch and eggs to make a smooth flan-like texture and almost plasticine appearance.

  • 1923 James Arness was born. Best known as Marshal Matt Dillon on the TV series ‘Gunsmoke,’ he also played the creature in the 1951 movie ‘The Thing from Another World.’ The creature was a vegetable based alien life form, a “super intellectual carrot.”
  • 1955 Morimoto Masaharu was born in Hiroshima, Japan. Masaharu is a well known Japanese Chef, and was the last Japanese Iron Chef on the TV show, Iron Chef (late 1990s).  He now has his own restaurant, Morimoto in Philadelphia.
  • 1971 Don Maclean recorded ‘American Pie’.
  • 1979‘Reunited’ by Peaches & Herb is #1 on the charts
  • 1999 R.I.P.  Waldo Lonsbury Semon. Semon was an American Inventor who is credited with the invention of Vinyl. Vinyl is the 2nd most used plastic in the world.  Semon held over 100 patents.

Five Food Finds about Cobbler

  1. A cobbler is a deep dish (casserole or soufflé dish) fruit pie (peach is most common) with only a top biscuit dough crust.
  2. Fruit cobblers can be made with almost any fruit, singly or in combination.
  3. The cobbler takes its name from the biscuit dough crust on top – it is rough looking or ‘cobbled.’   It originated in the U.S. sometime in the early to mid 19th century.
  4. A Cobbler is also a drink, which probably predates the fruit cobbler pie.
  5. A cobbler usually consisted of whiskey or rum with fruit juice and/or sugar, garnished with mint and/or citrus.

1838 Charles Maurice de Talleyrand-Perigord died. Charles Maurice de Talleyrand-Perigord, known simply as Talleyrand, French statesman, diplomat and grand gourmet, called the ‘first fork of France.’ He served at the top levels of French governments for almost 50 years. During this time his chefs included Bouchee, Careme, and Avice. Many culinary preparations have been created or named for him.

1886 John Deere died. Inventor and manufacturer, he developed the first steel plow in the 1830s, and founded John Deere & Company in 1868.

1967 Tennessee repealed its 1925 law making it illegal to teach evolution in public schools.

1985 The largest salmon, a Chinook salmon, caught with rod and reel weighed over 97 pounds and was caught in Alaska.

1986‘Chicken Song’ by Spitting Image hit #1 in UK.

1992 Lawrence Welk, champagne music-maker, died.

  • 1748 Joseph Bramah was born. An English engineer, among his many inventions was a beer engine, used to deliver beer from keg to glass without artificial carbonation being added.

It was exhibited in New York, and its diet was described as: “thirty pounds of rice besides hay and straw…. all kinds of wine and spiritous liquors….and every kind of vegetable; it will also draw a cork from a bottle in its trunk.”
  • 1883 Alfred Packer was convicted of cannibalism in Colorado. (Actually he was convicted of murder, since cannibalism was not against the law). He was sentenced to death, but was retried in 1886 and sentenced to 40 years. He was paroled in 1901, and died in 1907.
  • 1902 Baron Philippe de Rothschild was born. (Wine producer).
  • 1909 Mervyn Hugh Cowie was born. Cowie was a British wildlife conservationist, founder and director of Kenya’s Royal National Parks.
  • 1916 Funk Brothers Seed Company sold the first U.S. shipment of hybrid seed corn to Samuel Ramsay of Jacobsburg, Ohio. Todayinsci.com
  • 1916 Edna Lewis was born, southern chef and author of ‘The Taste of Southern Cooking’ (1976).
  • 1917 James Buchanan (‘Diamond Jim’) Brady died. An American financier and philanthropist, Diamond Jim was known for his diamond jewelry and his huge appetite.
  • 1944 Jack Casady of the music group ‘Hot Tuna’ was born.
  • 1976 The $2 bill is reintroduced by the U.S. Treasury.
  • 2008 The National Meats Institute in Uruguay organized a record Largest BBQ, grilling about over 26,000 pounds of beef on a mile long bbq grill using 6 tonnes of charcoal.

The most notable influences on southern cooking come from English, Scottish, Irish, German, French, Native American, and African American cuisines.

Many items such as squash, tomatoes, corn (and its derivatives, including grits), as well as the practice of deep pit barbecuing were inherited from the southeastern American Indian tribes such as the Caddo, Choctaw, and Seminole.

The South’s propensity for a full breakfast is derived from the English fry up, although it was altered substantially.

A traditional Southern meal is pan-fried chicken, field peas (such as black-eyed peas), greens (such as collard greens or mustard), mashed potatoes, cornbread or corn pone, sweet tea, and a dessert that is usually a pie (sweet potato, chess, shoofly, pecan, and peach are traditional southern pies), or a cobbler (peach, blackberry, or mixed berry are traditional cobblers).

1808 Salmon Portland Chase was born. He was Secretary of the Treasury under Abraham Lincoln, and later Chief Justice.

1921 Pierre Franey was born. A French chef who became famous as the chef of ‘Le Pavillon’ restaurant in New York City from 1945 to 1960. He published several cookbooks and collaborated with Craig Claiborne on the New York Times food column, ‘The 60 Minute Gourmet’.

1957 The Frisbee was invented. The pie tins of the Frisbee Pie Company of Connecticut were the inspiration for the creation of the Frisbee. A Wham-O employee supposedly saw drivers for the pie company showing Yale students how to throw the pie tins.

1962 Ernie Kovacs, innovative comedian, died. One of Kovacs’ first TV appearances was in Philadelphia in 1950 with a chef, Albert Mathis from the Gulph Mills Country Club, in a live unrehearsed cooking show titled ‘Deadline for Dinner.’

1968 “I Heard It Through The Grapevine” by Gladys Knight & Pips is #1 on the charts.

2002 U.S. President George W. Bush fainted after choking on a pretzel

Fried pies are small fried dessert pastries, which have fruit fillings wrapped in the dough.

Fried apple pies were first introduced in McDonald’s in 1968, originally fried in lard.

  • 1878 The first telephone was installed in the White House in Washington, D.C. Alexander Graham Bell installed it himself. Rutherford B. Hayes was president.
  • 1885 Pepper is sold for the first time.
  • 1886 Rex Stout, American crime writer was born. More than 70 of his novels and stories feature the fictional gourmand/gourmet detective, Nero Wolfe. Archie Goodwin, the detective’s assistant, described him as weighing “one seventh of a ton” (about 286 pounds). Shad Roe and Duck were two of Wolfe’s favorites, and he also consumed copious amounts of beer. Stout also published ‘The Nero Wolfe Cookbook’ in 1973.
  • 1936 The first patent was issued for a commercial scale hydroponic system for plant culture (a‘hydroponicum’). Ernest Walfrid Brundin and Frank F. Lyon received the patent on the system they had set up the previous year.
  • 1944 Eric Bloom of the music group ‘Blue Oyster Cult’ was born.
  • 1990 British and French workers digging the Channel Tunnel from their respective countries drilled through a final piece of rock and shook hands,  22.3 km from the UK, 15.6 km from France.
  • 1999 The Russian Duma passed an animal rights bill that prohibits people from eating their pets.

Did you know…

  1. Shortcake is a sweet biscuit (in the American sense: that is, a crumbly, baking soda- or baking powder-leavened bread).
  2. Shortcake is typically made with flour, sugar, baking powder or soda, salt, butter, milk or cream, and sometimes eggs.
  3. The most famous dessert made with shortcake is strawberry shortcake.
  4. Though today’s shortcakes are usually of the biscuit or sponge-cake variety, earlier American recipes called for pie crust in rounds or broken-up pieces, which was a variety still being enjoyed in the 20th century, particularly in the South.
  5. Though strawberry is the most widely known shortcake dessert, peach shortcake, blueberry shortcake, chocolate shortcake and other similar desserts are made along similar lines. It is also common to see recipes where the shortcake itself is flavored; coconut is a common addition. The term “shortcake” often refers to shortbread in the UK.

  • 1800 Chicken Marengo was supposedly created by Napoleon’s Swiss chef to commemorate the occasion of Napoleon’s victory over the Austrians in the Battle of Marengo on this day.
  • 1834 Cyrus Hall McCormick patented his reaping machine.
  • 1972 The EPA banned DDT in the USA. DDT residue is still found in some foods grown in the U.S. in 2002.
  • 1988 Unusual uses for peanut butter sandwiches: In New Jersey, students in a school were kept in an extra 45 minutes by a six-foot black bear that had wandered into the playground. They kept it at bay by tossing out peanut butter sandwiches until the game warden arrived to take him away.
  • 1994 R.I.P. Henry Mancini. Oscar winning music composer, he wrote many songs and film scores, including the score for ‘Breakfast at Tiffany’s

Did you know…

  1. The donut or doughnut is a deep-fried piece of dough or batter. It comes from the Dutch origin of olykoeck or “oily cake”. The two most common types of donuts are the flattened sphere (you know…the ones that are injected with jelly or custard) and the ring donut.
  2.  Internationally, Dunkin’ Donuts has over 1700 locations in 29 countries and over 6,000 stores in 30 countries world-wide! In the U.S. there are over 4,400 locations across 36 states.
  3. Krispy Kreme is probably best known for their fresh, hot, glazed, yeast-raised doughnuts. The company’s “Hot Doughnuts Now” flashing sign is an integral part of the brands appeal and fame.
  4.  Jelly-filled and Chocolate frosted also rank as their top sellers. Coconut Crunch, although not a number one seller, still remains one of the over 52 varieties of donuts the chain produces on a yearly basis.
  5. Americans consume 10 billion doughnuts annually. It really is too big of a number when you consider that as of 1997, there were 6,792 doughnut shops in the U.S. alone. In 2005, I can only imagine that the number of doughnut shops has increased dramatically. Unfortunately, 1997 was the last year that all overall statistics and data is available on this subject (or at least that I can find!).

Today’s Food History

  • 1784 Marie-Antoine Carême was born in Paris, France. Marie Antoine Carême was known as “the cook of kings and the king of cooks”. He is the founder and architect of French haute cuisine. His story is one out of a Dickens novel.
  • He was one of 25 (?) children born to an impoverished family who put him out on the street at the age of about 10 to make his own way in the world. Lucky for the world he knocked on the door of a restaurant for a job. He might have knocked on the door of a blacksmith!
  • By the age of 21 Carême was chef de cuisine to Talleyrand. He also served as head chef to the future George IV of England, Emperor Alexander I of Russia, and Baron James de Rothschild. He wrote several large books on cookery, with hundreds of recipes and menus, a history of French cooking, instructions for organizing kitchens, and directions for elaborate architectural constructions of food for display (pièces montées). Carême died at the age of 48.
  • 1786 In New York City, the first commercially made ice cream is offered for sale.
  • 1824 A washing machine was patented by Noah Cushing of Quebec. This was the first Canadian patent ever issued.
  • 1848 Franklin Hiram King was born. American agricultural scientist and inventor of the cylindrical tower silo.
  • 1859 Walter Hunt died. Hunt invented the first safety pin (‘dress pin’) in 1849.
  • 1869 The first American patent for a sweeping machine was issued to Ives W. McGaffney of Chicago.
  • 1871 Louisa Tetrazzini born. Italian operatic soprano. Chicken Tetrazzini, created by an American chef (San Francisco?), was named in her honor.
  • 1880 At the 1st International Miller’s Exhibition in Cincinnati, Ohio, Washburn Crosby Co. of Minnesota (forerunner of General Mills) won 3 top medals for their flour, including the ‘Gold Medal’ for Superlative Flour. They adopted ‘Gold Medal’ as the name of their best flour.
  • 1926 Dame Nelle Melba gave her farewell performance. Melba toast and Peach Melba were named in her honor.
  • 1937 World’s largest flower blooms in NY Botanical Garden, a 12 foot calla lily.
  • 1985 Creme Fraiche won the Belmont Stakes, ridden by Jockey Eddie Maple.

  • Cheesecake is a dessert formed of a topping made with soft, fresh cheese upon a base made from biscuit, pastry or sponge. The topping is frequently sweetened with sugar and flavored or topped with a puree or compote of fruit.
  • Savory cheesecakes also exist, served sometimes as hors d’oeuvre or with accompanying salads. Despite their name, cheesecakes are technically tarts; the word ‘cake’ was formerly applied to a much broader category of foods than it is today.

  • Cato the Elder’s De Agri Cultura includes recipes for two cakes for religious uses: libum and placenta. Of the two placenta is most like modern cheesecakes having a crust that is separately prepared and baked.

  • Cheesecakes can be broadly categorised into two basic types – baked and unbaked – and each comes in a variety of styles determined by region.
  • Japanese-style cheesecake relies upon the emulsification of cornstarch and eggs to make a smooth flan-like texture and almost plasticine appearance.

  • 1923 James Arness was born. Best known as Marshal Matt Dillon on the TV series ‘Gunsmoke,’ he also played the creature in the 1951 movie ‘The Thing from Another World.’ The creature was a vegetable based alien life form, a “super intellectual carrot.”
  • 1955 Morimoto Masaharu was born in Hiroshima, Japan. Masaharu is a well known Japanese Chef, and was the last Japanese Iron Chef on the TV show, Iron Chef (late 1990s).  He now has his own restaurant, Morimoto in Philadelphia.
  • 1971 Don Maclean recorded ‘American Pie’.
  • 1979‘Reunited’ by Peaches & Herb is #1 on the charts
  • 1999 R.I.P.  Waldo Lonsbury Semon. Semon was an American Inventor who is credited with the invention of Vinyl. Vinyl is the 2nd most used plastic in the world.  Semon held over 100 patents.

  • A cobbler is a deep dish (casserole or soufflé dish) fruit pie (peach is most common) with only a top biscuit dough crust.
  • Fruit cobblers can be made with almost any fruit, singly or in combination.

Here are today’s Five Food Finds about Peach Melba:

Peach Melba a classic dessert made of peaches served with vanilla ice cream, raspberries & sauce.

The dessert was created to celebrate the  famous and slender opera singer, Nellie Melba in 1892.

It is said when she gained weight in her later career the same chef created a thin baked toast for her diet, Melba toast.

Other versions of this dessert use pears, apricots, or strawberries instead of peaches and / or use raspberry sauce or melted red currant jelly instead of raspberry purée.

On This Day in Food History…

1808 Salmon Portland Chase was born. He was Secretary of the Treasury under Abraham Lincoln, and later Chief Justice.

1921 Pierre Franey was born. A French chef who became famous as the chef of ‘Le Pavillon’ restaurant in New York City from 1945 to 1960. He published several cookbooks and collaborated with Craig Claiborne on the New York Times food column, ‘The 60 Minute Gourmet’.

1957 The Frisbee was invented. The pie tins of the Frisbee Pie Company of Connecticut were the inspiration for the creation of the Frisbee. A Wham-O employee supposedly saw drivers for the pie company showing Yale students how to throw the pie tins.

1962 Ernie Kovacs, innovative comedian, died. One of Kovacs’ first TV appearances was in Philadelphia in 1950 with a chef, Albert Mathis from the Gulph Mills Country Club, in a live unrehearsed cooking show titled ‘Deadline for Dinner.’

1968 “I Heard It Through The Grapevine” by Gladys Knight & Pips is #1 on the charts.

2002 U.S. President George W. Bush fainted after choking on a pretzel

Here are today’s five things to know about Fried Pie:

Fried pies are small fried dessert pastries, which have fruit fillings wrapped in the dough.

Fried apple pies were first introduced in McDonald’s in 1968, originally fried in lard.

New Hampshire fried pies were the favorite dessert of U.S. president Franklin Pierce.

The two most popular flavors of fried pies in the deep South are apple and peach.

Roadside stands in the South often refer to fried pies as “Crab Lanterns.”

 

Today’s Food History

  • 1878 The first telephone was installed in the White House in Washington, D.C. Alexander Graham Bell installed it himself. Rutherford B. Hayes was president.
  • 1885 Pepper is sold for the first time.
  • 1886 Rex Stout, American crime writer was born. More than 70 of his novels and stories feature the fictional gourmand/gourmet detective, Nero Wolfe. Archie Goodwin, the detective’s assistant, described him as weighing “one seventh of a ton” (about 286 pounds). Shad Roe and Duck were two of Wolfe’s favorites, and he also consumed copious amounts of beer. Stout also published ‘The Nero Wolfe Cookbook’ in 1973.
  • 1936 The first patent was issued for a commercial scale hydroponic system for plant culture (a‘hydroponicum’). Ernest Walfrid Brundin and Frank F. Lyon received the patent on the system they had set up the previous year.
  • 1944 Eric Bloom of the music group ‘Blue Oyster Cult’ was born.
  • 1990 British and French workers digging the Channel Tunnel from their respective countries drilled through a final piece of rock and shook hands,  22.3 km from the UK, 15.6 km from France.
  • 1999 The Russian Duma passed an animal rights bill that prohibits people from eating their pets.

Did you know…

  1. Shortcake is a sweet biscuit (in the American sense: that is, a crumbly, baking soda- or baking powder-leavened bread).
  2. Shortcake is typically made with flour, sugar, baking powder or soda, salt, butter, milk or cream, and sometimes eggs.
  3. The most famous dessert made with shortcake is strawberry shortcake.
  4. Though today’s shortcakes are usually of the biscuit or sponge-cake variety, earlier American recipes called for pie crust in rounds or broken-up pieces, which was a variety still being enjoyed in the 20th century, particularly in the South.
  5. Though strawberry is the most widely known shortcake dessert, peach shortcake, blueberry shortcake, chocolate shortcake and other similar desserts are made along similar lines. It is also common to see recipes where the shortcake itself is flavored; coconut is a common addition. The term “shortcake” often refers to shortbread in the UK.

  • 1800 Chicken Marengo was supposedly created by Napoleon’s Swiss chef to commemorate the occasion of Napoleon’s victory over the Austrians in the Battle of Marengo on this day.
  • 1834 Cyrus Hall McCormick patented his reaping machine.
  • 1972 The EPA banned DDT in the USA. DDT residue is still found in some foods grown in the U.S. in 2002.
  • 1988 Unusual uses for peanut butter sandwiches: In New Jersey, students in a school were kept in an extra 45 minutes by a six-foot black bear that had wandered into the playground. They kept it at bay by tossing out peanut butter sandwiches until the game warden arrived to take him away.
  • 1994 R.I.P. Henry Mancini. Oscar winning music composer, he wrote many songs and film scores, including the score for ‘Breakfast at Tiffany’s

Did you know…

  1. The donut or doughnut is a deep-fried piece of dough or batter. It comes from the Dutch origin of olykoeck or “oily cake”. The two most common types of donuts are the flattened sphere (you know…the ones that are injected with jelly or custard) and the ring donut.
  2.  Internationally, Dunkin’ Donuts has over 1700 locations in 29 countries and over 6,000 stores in 30 countries world-wide! In the U.S. there are over 4,400 locations across 36 states.
  3. Krispy Kreme is probably best known for their fresh, hot, glazed, yeast-raised doughnuts. The company’s “Hot Doughnuts Now” flashing sign is an integral part of the brands appeal and fame.
  4.  Jelly-filled and Chocolate frosted also rank as their top sellers. Coconut Crunch, although not a number one seller, still remains one of the over 52 varieties of donuts the chain produces on a yearly basis.
  5. Americans consume 10 billion doughnuts annually. It really is too big of a number when you consider that as of 1997, there were 6,792 doughnut shops in the U.S. alone. In 2005, I can only imagine that the number of doughnut shops has increased dramatically. Unfortunately, 1997 was the last year that all overall statistics and data is available on this subject (or at least that I can find!).

Today’s Food History

  • 1784 Marie-Antoine Carême was born in Paris, France. Marie Antoine Carême was known as “the cook of kings and the king of cooks”. He is the founder and architect of French haute cuisine. His story is one out of a Dickens novel.
  • He was one of 25 (?) children born to an impoverished family who put him out on the street at the age of about 10 to make his own way in the world. Lucky for the world he knocked on the door of a restaurant for a job. He might have knocked on the door of a blacksmith!
  • By the age of 21 Carême was chef de cuisine to Talleyrand. He also served as head chef to the future George IV of England, Emperor Alexander I of Russia, and Baron James de Rothschild. He wrote several large books on cookery, with hundreds of recipes and menus, a history of French cooking, instructions for organizing kitchens, and directions for elaborate architectural constructions of food for display (pièces montées). Carême died at the age of 48.
  • 1786 In New York City, the first commercially made ice cream is offered for sale.
  • 1824 A washing machine was patented by Noah Cushing of Quebec. This was the first Canadian patent ever issued.
  • 1848 Franklin Hiram King was born. American agricultural scientist and inventor of the cylindrical tower silo.
  • 1859 Walter Hunt died. Hunt invented the first safety pin (‘dress pin’) in 1849.
  • 1869 The first American patent for a sweeping machine was issued to Ives W. McGaffney of Chicago.
  • 1871 Louisa Tetrazzini born. Italian operatic soprano. Chicken Tetrazzini, created by an American chef (San Francisco?), was named in her honor.
  • 1880 At the 1st International Miller’s Exhibition in Cincinnati, Ohio, Washburn Crosby Co. of Minnesota (forerunner of General Mills) won 3 top medals for their flour, including the ‘Gold Medal’ for Superlative Flour. They adopted ‘Gold Medal’ as the name of their best flour.
  • 1926 Dame Nelle Melba gave her farewell performance. Melba toast and Peach Melba were named in her honor.
  • 1937 World’s largest flower blooms in NY Botanical Garden, a 12 foot calla lily.
  • 1985 Creme Fraiche won the Belmont Stakes, ridden by Jockey Eddie Maple.
